Malhitali Köfte (Gaziantep)

6 cups red lentils
1 cup sesame seeds
1 tablespoon pepper paste
1 table spoon tomato paste
2 onions
1/2 cup oil
2 bunches of parsley
250 gr. spring onions
250 gr. fresh garlic
salt and red pepper

Place the red lentils in a pan with water to a depth of two fingers over the lentils. Add a little salt and pepper and simmer. When almost cooked, add the tomato and pepper paste and the sesame seeds. Simmer on low for 2-3 more minutes and then turn off the heat. Chop the onions very finely, saute in the oil and add red pepper. Chop the vegetables and set aside. When the lentil and sesame mixture is cool enough to handle, knead for 5 minutes. Add the onion and oil mixture and knead further. Add the chopped parsley, onions and garlic, and squeeze into small croquettes in the palm of your hand or spread on a dish and serve with a spoon.
