Sütlaç and Zerde (Gaziantep)

6 cups of water
1/2 cup of rice
2 cups of sugar
rind of one orange or lemon if desired
Wash the rice and cook in the water until soft. Add the grated orange or lemon rind and the sugar and cook until the mixture thickens.
Note: If the Sütlaç and the Zerde are served in the same dish, place the rice pudding on the bottom and leave to cool. Later, put the saffron pudding on top and garnish with ground pistachios.
